We went to the Lydgate Farms for a chocolate tasting tour. It was very educational and, of course, very tasty. We learned about the time consuming and labor intensive process of making chocolate from cacao seeds. The farm has lots of other trees and plants to aid in the growth of the cacao trees. I'll just dump photos now...
The cacao seed is covered with a sweet white nectar. We ducked the nectar off which left the bitter inside. It is full of anti oxidents, but very bitter. I ate it.
I think this is the seed after it is riasted. I broke the skin off by rolling it between my fingers and ate the inside. It was bitter, but good for me!
